Thyme honey comes in two colour groups, the first one in Spring is a light amber tone, the other in late spring or summer tends to be amber, occasionally with slightly reddish tones.
Very characteristic aroma, floral with a distinctive phenolic component, very characteristic, intense and persistent. Sweet taste with clear acidic undertones. It can have slight salty undertones.
Rarely tends to crystallize.
It is one of the most sought after honeys in the past few years due to its great medicinal attributes.
